Louisiana Fish Fry has been the standard for Gulf Coast seafood boils for decades. It is not subtle. It is a powdered boil mix packed with cayenne, mustard seed, coriander, bay leaves, and enough heat to make your lips tingle. You dump it into the water along with lemons, onions, and maybe a sack of new potatoes and corn, and let it do the work. The 4.5-pound bag is the serious one — this is not a jar for seasoning a single skillet of shrimp. This is for a full pot, a full propane burner, and a full table covered in newspaper.
It handles crawfish, shrimp, and blue crab equally well. Some people use it for a low-country boil with sausage and corn.
